As we enter the fall season, it’s time to start thinking about pickling and canning seasonal produce. Not only is it a great way to preserve your favorite fruits and vegetables, but it also adds a delicious flavor to your meals.

Before you start pickling and canning, make sure you have the right equipment. You’ll need jars with lids that seal tightly, a large pot for boiling water, tongs for lifting jars in and out of hot water, and a funnel for pouring liquid into jars.

When selecting produce for pickling or canning, choose fresh fruits and vegetables that are firm and without blemishes. Some popular choices include cucumbers, green beans, carrots, beets, peppers, tomatoes, peaches, pears and apples.

For pickling recipes that require vinegar as an ingredient like dill pickle spears or bread-and-butter chips- opt for white vinegar over other types like apple cider vinegar which may change the taste of your recipe.

For canning recipes such as canned tomatoes or canned corn kernels – use a pressure cooker instead of just boiling them down in water on its own since they are low-acid foods.

One important step before starting any recipe is to sterilize the jars by either running them through the dishwasher on high heat settings or boiling them in hot water for several minutes before filling with contents.

Once you’ve prepared your produce (washed thoroughly) according to the recipe instructions (which often includes blanching), pack them carefully into each jar using tongs making sure there are no air pockets between produce pieces so it’s evenly distributed inside each jar. Then follow specific directions regarding how much liquid should be added along with any additional ingredients needed like spices etc., finally sealing tightly with their corresponding lid size after wiping off any excess filling around the rims of each jar.

After filling all jars securely sealed up tight with their corresponding lids sizes , place them upright in a large canning pot filled with enough water to cover the jars by about 1-2 inches. Bring it to a boil and let it continue boiling for the duration of time noted in your recipe.

Once they’re done boiling, carefully remove each jar from the pot using tongs or canning tools and place them on a towel-lined surface to cool down gradually at room temperature. After they are fully cooled off (usually after several hours), check if any have not sealed properly by pressing down gently on their center lids- if one gives way then put those aside in the fridge for eating soon while others that are tightly sealed will be good for storing up to months.
